Ingredients
- 4 chicken breasts (or pieces of your choice)
- Barbecue sauce (Enough to baste chicken, about 2 cups)
Marinade
- ½ cup extra-virgin olive oil (or avocado oil)
- 1 cup apple cider vinegar (or apple juice)
- â…“ medium yellow onion (finely chopped)
- 2 garlic cloves (minced)
- 2 tbsp honey
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon ground cumin
- ¼ teaspoon cayenne pepper (optional)
Instructions
- Mix marinade ingredients in a Ziploc bag: ½ cup extra-virgin olive oil, 1 cup apple cider vinegar, ⅓ medium yellow onion, 2 garlic cloves, 2 tbsp honey, 1 teaspoon salt, ½ teaspoon black pepper, ½ teaspoon paprika, ½ teaspoon ground cumin and ¼ teaspoon cayenne pepper. Add 4 chicken breasts to the bag and seal tightly. Turn the bag a few times to coat the chicken. Put bag flat in refrigerator. Marinate chicken for 30-60 minutes in the fridge, flipping the bag over occasionally.
- Preheat the grill to 400°F.
- Remove chicken from ziploc bag and discard bag and marinade. Place chicken on grill. Baste the chicken with barbecue sauce. Grill 5-6 minutes per side, basting before you flip and again on the other side after you flip. Grill until an instant read thermometer reads 165-170℉.
- Brush chicken with barbecue sauce and remove to a plate to rest for 5 minutes before serving. Serve with addtional barbecue sauce.
