Basil Mint Tomato Soup With Honey

Basil Mint Tomato Soup with Honey is a fresh twist, blending sweet honey, basil, and mint for a unique and flavorful bowl.

So, I recently went on a delightful cruise where I had this incredible tomato soup—it was perfectly sweet but not overly sugary, and I couldn’t stop thinking about it! Once I got home, I had to recreate it! I call it Basil Mint Tomato Soup with Honey. Instead of using refined sugar, I swapped in honey for a natural sweetness, added a hint of mint for a fresh twist, and, of course, included fragrant fresh basil to tie it all together. It turned out amazing, and now it’s my new go-to comfort food when I want something cozy yet with a touch of flair.

Recipe Substitutions And Notes

  • Mint can be quite potent, but it adds significant depth to the soup. Feel free to adjust the amount based on your taste preference.
  • Fresh Basil truly elevates this soup. While you can substitute with 2 teaspoons of dried basil, the flavor profile won’t be the same, so use fresh if possible.

Step-by-Step Process for Making Basil Mint Tomato Soup

  1. Sauté Onions and Garlic: Start by cooking the onions and garlic in olive oil until they are translucent and aromatic.
  2. Combine Ingredients: Add all the remaining ingredients—except for the heavy cream—into the pot. Let the mixture heat for about 10 minutes to allow the flavors to meld.
  3. Blend Until Smooth: If you prefer a velvety texture, use an immersion blender to puree the soup to your desired consistency.
  4. Add Cream and Serve: Stir in the heavy cream for a rich, comforting finish. Serve it up with a side of grilled cheese for the perfect meal!

Georgie’s Tips

  • The soup tends to bubble when it boils, so keep the lid handy! I usually place a spoon in the pot and prop the lid on top to prevent it from overflowing while keeping splashes at bay.
  • Here are a couple of tips to cut onions without crying: A friend suggested using a sharp knife to minimize damage to the onion, which limits the release of tear-inducing compounds into the air. Another effective method, which I always forget until my eyes start tearing up, is to chill the onions in the fridge before cutting them

Frequently Asked Questions

Grilled cheese is the classic, but garlic bread, croutons, or even a side salad pairs nicely. If you’re feeling fancy, try topping the soup with fresh basil or a swirl of cream.

Keep it in the fridge for up to 3-4 days, or freeze it for a couple of months. Just make sure you cool it down completely before popping it in the freezer.
