But this time, I decided to take matters into my own hands. Buckle up, because we’re making an easy, irresistibly delicious homemade herbed “Boursin” pasta that’s smooth, creamy, and bursting with herbal goodness. And the best part? No store-bought Boursin here—I make it myself with just a few simple ingredients, so I know exactly what’s in it. Let’s do this!

Roast Spaghetti Squash

Cut the squash in half, scoop out the seeds, score and drizzle with olive oil. Sprinkle with salt. Roast it up until its nice and soft and the strands release easily.

For the Boursin-style cheese:

  • 8 oz low-fat cream cheese
  • 1 cup low-fat cottage cheese
  • 6 tbsp unsalted butter (softened)
  • 1 tbsp dried parsley (2 tbsp if using fresh)
  • 1 teaspoon dried dill
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried basil
  • ½ teaspoon dried chives (or substitute 2 tbsp sliced green onions)
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • Preheat oven to 400℉, grease a 9×11 baking dish with butter and line a baking sheet with parchment paper.
  • Cut 1 spaghetti squash in half, scoop out the seeds. Take a knife and slice a few slits into the flesh. Brush each half with 1 tsp of olive oil. Sprinkle each side with ½ teaspoon of course sea salt.

  • Roast the squash halves cut-side down on a baking sheet lined with parchment paper for 30 minutes.

  • While the spaghetti squash is roasting, add 3 cup fresh spinach to the bottom of the baking dish, then add 8 oz cherry tomatoes and 1 cup sliced mushrooms.

  • In a large mixing bowl or food processor, combine 8 oz low-fat cream cheese, 1 cup low-fat cottage cheese, 6 tbsp unsalted butter, 1 tbsp dried parsley, 1 teaspoon dried dill, 1 teaspoon dried marjoram, 1 teaspoon dried basil, ½ teaspoon dried chives and ½ teaspoon dried thyme. Pulse or stir until well-combined.

  • Shape the cheese mixture into a rounded shape and place it in the center of your baking dish over the vegetables. Sprinkle with ¼ cup parmesan, ½ teaspoon salt, and ½ teaspoon pepper.

  • Put the sauce in with the squash and continue baking for 20 minutes or until the cheese is hot and the spaghetti squash is tender.
  • Remove the sauce and stir it together.
  • Remove the sqaghetti squash noodles from the shell. Toss them with the sauce in the casserole dish.
  • Serve with grilled chicken and a side salad.

Notes
To remove the strands of spaghetti squash, run a fork down the sides and then gently remove the strands. Scrape out what’s left with a spoon.
Substitutions
I made this healthier by replacing some of the cream cheese with cottage cheese. It doesn’t hold together like Boursin cheese, but I know what is in it so its a trade off I am willing to make. It still tastes amazing.
I used dried herbs in this recipe to keep it simple, but replacing what you can with minced fresh herbs would give it a truly sensational depth of flavor.
If you want to add some protein, I suggest adding chopped grilled chicken to keep it healthy.
Replace the spaghetti squash with pasta noodles if you wish. Cook according to package directions and stir them into the sauce in the end.
