Brioche French Toast Casserole: The Ultimate Overnight French Toast Recipe
If you’re craving a breakfast that’s as easy as it is indulgent, this brioche French toast casserole is the way to go. Made with rich, buttery brioche bread, this dish takes everything you love about overnight French toast and makes it even better.
The magic happens overnight—simply layer thick slices of brioche in a casserole dish, pour over a creamy custard mixture (eggs, milk, cinnamon, and vanilla), and let it soak while you sleep. By morning, the brioche is perfectly infused with flavor and ready to bake. The result? A golden, crispy-topped Brioche French toast casserole with a soft, custardy center.
Before I forget, here is my recipe for making brioche bread! It was so much fun to make this from scratch. So. Much. Butter.
Here’s why I love this dish!
- Whether you’re hosting brunch or just want to treat your family, this overnight French toast casserole saves you time and delivers big on flavor.
- Top it with powdered sugar, syrup, or fresh berries for a breakfast that feels like dessert!
- Its the perfect Christmas morning breakfast. Don’t spend all morning in the kitchen, pop this in the oven and it will be ready by the time the kids have opened their presents.
We can’t talk about overnight french toast without mentioning homemade whipped topping. This one is made with cream cheese so it holds its shape and also adds an additional layer of creamy goodness to the top of your overnight french toast. I also want to plug another good french toast recipe that you should try: Loaded Pineapple Overnight French Toast. Spoiler alert! It has carmalized pineapple, a toffee sauce drizzle and gingerbread cookies. It’s so very good.
Alright, let’s get cooking!
Chill Time: Cover your casserole dish with plastic wrap and pop it in the fridge for at least four hours or overnight if you can. This soaking time allows the brioche to soak up all that sweet goodness, ensuring every bite is packed with flavor.
Cube that Brioche: Start by cutting your brioche bread into cubes and filling your casserole dish about three-quarters full. You want enough bread to soak up all that delicious egg mixture!
Whisk It Up: In a large mixing bowl, grab a whisk and combine your eggs, milk, vanilla extract, cinnamon, and brown sugar. Make sure it’s all mixed up nicely—this is what makes your French toast casserole so fluffy and flavorful.
Pour and Top: Now, pour that luscious egg mixture evenly over the brioche cubes. Then, it’s time to add your sliced strawberries and blueberries on top. Don’t be shy; sprinkle those beauties all over!
Overnight soak: Cover the casserole and place it in the fridge. Overnight french toast should soak for at least 8 hours, but it’s flexible enough to sit up to 12 hours in the fridge. This long soak allows the brioche bread to fully absorb the custard mixture, ensuring every bite is rich and flavorful.
Bake: Pull the soaked brioche french toast out of the fridge the next morning. Bake for 40 minutes and serve it with warm maple syrup and powdered sugar. Or indulge and whip up some homemade whipped topping.
