My absolute favorite cookie is chocolate chip—hands down. Nothing else even comes close. With so many chocolate chip cookie recipes out there, I firmly believe mine is the best (wink, wink).

About a year ago, I decided to level up my easy chocolate chip cookie recipe by adding caramel. After all, who doesn’t love a cookie with an ooey-gooey caramel center? My first attempt involved homemade caramel stirred directly into the batter. While the initial batch turned out amazing, my second try was a disaster. That’s the reality of recipe creation—sometimes it takes a little trial and error.

After a few more experiments, I discovered the perfect solution: using store-bought soft caramels. This method guarantees a foolproof recipe for caramel chocolate chip cookies that you can’t go wrong with.

Ingredients
  

  • cups all-purpose flour ( spooned & leveled)
  • 1 tsp baking soda
  • tsp cornstarch
  • ½ tsp salt
  • ¾ cup melted unsalted butter
  • ¾ cup Light Brown Sugar
  • ½ cup granulated sugar
  • 1 large egg + 1 egg yolk (at room temperature)
  • 2 tsp vanilla extract
  • cups semi-sweet chocolate chips ( or chocolate chunks)
  • 24 pieces of semi-solid caramel (for melting in the middle of the cookie)

Instructions
 

  • Preheat oven to 375 degrees F and line a cookie sheet with parchment paper.
  • In a large bowl, whisk together 2¼ cups all-purpose flour, 1 tsp baking soda, 1½ tsp cornstarch and ½ tsp salt.

  • In a separate bowl, combine ¾ cup melted unsalted butter, ¾ cup Light Brown Sugar, ½ cup granulated sugar, 1 large egg + 1 egg yolk and 2 tsp vanilla extract.

  • Add dry ingredients to the wet ingredients and mix until well-combined.
  • Sir in 1¼ cups semi-sweet chocolate chips. Chill dough for 30 minutes.

  • Take 1-2 tsp of dough and flatten it in your palm. Place a small piece of caramel on top and carefully form the dough into a ball around it. Place on the cookie sheet. Do not flatten.

  • Bake for 8-10 minutes or until lightly browned but still soft in the center. Cool mostly before enjoying.

Notes
I like to chill the dough so the fats solidify before baking. I find they spread less and the end result is softer.
Substitutions
After a lot of trial and error and multiple failed batches of cookies, I resigned myself to using old-fashioned store-bought caramels for these cookies. If you have better luck making soft caramels, I bow down to you.
