About a year ago, I decided to level up my easy chocolate chip cookie recipe by adding caramel. After all, who doesn’t love a cookie with an ooey-gooey caramel center? My first attempt involved homemade caramel stirred directly into the batter. While the initial batch turned out amazing, my second try was a disaster. That’s the reality of recipe creation—sometimes it takes a little trial and error.
After a few more experiments, I discovered the perfect solution: using store-bought soft caramels. This method guarantees a foolproof recipe for caramel chocolate chip cookies that you can’t go wrong with.

Step 1
Mix Dry Ingredients
Whisk together flour, baking soda, cornstarch and salt.
Step 2
Mix Wet Ingredients
Then combine melted butter, both sugars, eggs and vanilla.
Step 3
Make Dough
Add the dry ingredients to the wet until well-combined. Then fold in the chocolate chips.
Step 4
Add Caramels
Form the dough around the caramel piece (I cut my caramels in half).
Step 5
Bake
Bake the cookies until slightly browned on the edges but still soft in the center.

Caramel Chocolate Chip Cookies
Ingredients
- 2¼ cups all-purpose flour ( spooned & leveled)
- 1 tsp baking soda
- 1½ tsp cornstarch
- ½ tsp salt
- ¾ cup melted unsalted butter
- ¾ cup Light Brown Sugar
- ½ cup granulated sugar
- 1 large egg + 1 egg yolk (at room temperature)
- 2 tsp vanilla extract
- 1¼ cups semi-sweet chocolate chips ( or chocolate chunks)
- 24 pieces of semi-solid caramel (for melting in the middle of the cookie)
Instructions
- Preheat oven to 375 degrees F and line a cookie sheet with parchment paper.
- In a large bowl, whisk together 2¼ cups all-purpose flour, 1 tsp baking soda, 1½ tsp cornstarch and ½ tsp salt.
- In a separate bowl, combine ¾ cup melted unsalted butter, ¾ cup Light Brown Sugar, ½ cup granulated sugar, 1 large egg + 1 egg yolk and 2 tsp vanilla extract.
- Add dry ingredients to the wet ingredients and mix until well-combined.
- Sir in 1¼ cups semi-sweet chocolate chips. Chill dough for 30 minutes.
- Take 1-2 tsp of dough and flatten it in your palm. Place a small piece of caramel on top and carefully form the dough into a ball around it. Place on the cookie sheet. Do not flatten.
- Bake for 8-10 minutes or until lightly browned but still soft in the center. Cool mostly before enjoying.
