What’s in Chili Lime Chicken Marinade?

  • Adobo Sauce: You can purchase adobo sauce, but making your own is incredibly easy and much more flavorful! Adobo is a robust blend of spices and chili peppers, and I love using chipotles—smoked, dehydrated poblano peppers that add depth and heat to your chicken.
  • Fresh Lime Juice: Go ahead and amp up the lime juice—there’s no such thing as too much! For an added zing, include lime zest as well. (My husband always tries to steal my lime peels for his margaritas, so I have to be quick!)
  • Cumin: While cumin is optional, it can enhance the smoky flavor profile. If you’re looking to kick things up a notch, cumin is your friend for a warm, earthy depth.
  • Garlic: Fresh garlic adds incredible aroma and flavor to the marinade, making each bite irresistible.
  • Olive Oil: Adding olive oil is optional. If you skip it, the adobo sauce will create a beautiful coating on the chicken as it bakes. If you prefer to prevent sticking and maintain moisture, a drizzle of olive oil will do the trick.

Georgie’s Tips

  • Preheat the Grill: Ensure your grill is nice and hot before adding the chicken. Aim for medium-high heat. This step guarantees perfect grill marks and seals in all those juicy flavors.
  • Oil the Grates: Lightly oil the grill grates before placing the chicken on them. This technique prevents sticking and helps achieve those lovely charred lines.
  • Let It Marinate: For the best flavor, allow the chicken to marinate for at least 30 minutes. However, if you can swing a few hours (or even overnight), do it! The chicken will soak up all that adobo-lime goodness.
  • Don’t Overflip: Allow the chicken to cook undisturbed on one side for about 5-7 minutes, depending on the thickness. This technique creates a nice sear and locks in flavor before flipping.
  • Check the Temperature: Use a meat thermometer to check for doneness. You’re aiming for 165°F in the thickest part of the chicken. If you don’t have a thermometer, slice into it and ensure the juices run clear.
  • Rest Before Slicing: After grilling, let the chicken rest for a few minutes. This crucial step keeps the meat juicy and allows the flavors to settle in.
  • Extra Lime Squeeze: Right before serving, give it a fresh squeeze of lime. This finishing touch brightens the dish and makes all the flavors pop!
