Step 1
Brown Bacon and Onions
I used turkey bacon but regular pork bacon will do. You want the onions to be translucent.
Step 2
Combine With Corn
In a bowl, mix the bacon and onions with creamed corn and regular sweet corn. Then stir in egg, milk and sour cream.
Step 3
Combine Dry Ingredients
We are making our own cornbread mix, so get all of that whisked together in a seperate bowl.
Step 4
Add to Buttered Casserole Dish
Add it to a buttered casserole dish. I used this 9-inch corningware dish.
Step 5
Bake and Top With Cheese
Bake this up and top it with cheese in the last 5 minutes.

Corn Casserole
Ingredients
- ½ onion (finely chopped)
- ½ lb bacon
- 1 minced garlic clove
- 1 cup sweet corn
- 1 cup creamed corn
- 1 cup sour cream
- ¾ cup milk
- ½ cup melted butter
- 1 Large eggs
- 1 cup cornmeal
- 1 cup flour
- ¼ cup sugar
- 1 tbsp baking powder
- ½ teaspoon salt
- ½ cup sharp white cheddar
Instructions
- Preheat oven to 350℉ and grease a casserole dish with butter.
- Fry ½ lb bacon and crumble. Saute ½ onion, that has been chopped, in the bacon grease. Add 1 minced garlic clove and cook for 30 seconds.
- In a large bowl combine 1 cup sour cream, 1 Large eggs ½ cup melted butter until smooth. Then, stir in the 1 cup sweet corn, 1 cup creamed corn, ¾ cup milk, the onion, bacon mixture.
- In a separate bowl, combine 1 cup cornmeal, 1 cup flour, ¼ cup sugar, 1 tbsp baking powder and ½ teaspoon salt.
- Add the dry ingredients to the wet ingredients and stir until combined. Spread mixture into a greased casserole dish and bake for 35-45 minutes (time depends on how thick the casserole is. Top with ½ cup sharp white cheddar and cook an additional 5 minutes.
- Serve warm.
