I used turkey bacon but regular pork bacon will do. You want the onions to be translucent.

Ingredients
  

  • ½ onion (finely chopped)
  • ½ lb bacon
  • 1 minced garlic clove
  • 1 cup sweet corn
  • 1 cup creamed corn
  • 1 cup sour cream
  • ¾ cup milk
  • ½ cup melted butter
  • 1 Large eggs
  • 1 cup cornmeal
  • 1 cup flour
  • ¼ cup sugar
  • 1 tbsp baking powder
  • ½ teaspoon salt
  • ½ cup sharp white cheddar

Instructions
 

  • Preheat oven to 350℉ and grease a casserole dish with butter.
  • Fry ½ lb bacon and crumble. Saute ½ onion, that has been chopped, in the bacon grease. Add 1 minced garlic clove and cook for 30 seconds.

  • In a large bowl combine 1 cup sour cream, 1 Large eggs ½ cup melted butter until smooth. Then, stir in the 1 cup sweet corn, 1 cup creamed corn, ¾ cup milk, the onion, bacon mixture.

  • In a separate bowl, combine 1 cup cornmeal, 1 cup flour, ¼ cup sugar, 1 tbsp baking powder and ½ teaspoon salt.

  • Add the dry ingredients to the wet ingredients and stir until combined. Spread mixture into a greased casserole dish and bake for 35-45 minutes (time depends on how thick the casserole is. Top with ½ cup sharp white cheddar and cook an additional 5 minutes.

  • Serve warm.

Notes
You need to bake this until the middle is set. If its runny, keep baking it.
Substitutions
A lot of recipes call for using Jiffy Corn Muffin mix. Its so easy to make my own, this recipe goes that route. If you want to use Jiffy Corn Muffin mix in your corn casserole, substitute one box of Jiffy for the following ingredients: cornmeal, flour, sugar and baking powder.
Add jalapeños for some heat.
