  • Add 1 tbsp extra-virgin olive oil, 1 Large eggs, 2 tbsp unsweetened cocoa powder and combine. Add 1 cup of bread flour and then 1 tsp salt on top of the flour. Salt can kill yeast so you want it distributed vs concentrated. Using the dough hook on the stand mixer or a wooden spoon, combine the mixture. Add the remaining flour 1 cup at a time until you get the right texture. It shouldn't be too sticky or too dry.
  • Add ½ cup semi-sweet mini chocolate chips Knead for about 8-10 minutes by hand (or 5-6 minutes in a stand mixer with a dough hook) until the dough is smooth and elastic and the chips are evenly distributed. An easy way to tell if the dough is ready is to press it with your finger. If it springs back, you are usually good.
  • Shape the dough into a ball and place it in a bowl. Cover with a damp cloth and let it rise in a warm spot for about 1-1.5 hours or until doubled in size.
