  • 2 tbsp avocado oil (or oil of your choice)
  • 1 cup tomato juice (V8 works also)
  • 4 slices bread (crumbled)

  • ¼ tsp ground black pepper
  • 2 tbsp Worcestershire sauce
  • 2 tbsp parsley
  • 2 Large eggs (slightly beaten)
  • pints cranberry sauce (homemade if you have it)
  • tbsp lemon juice (fresh squeezed)
  • ½ cup Light Brown Sugar

Instructions
 

  • Preheat oven to 375℉.
  • In a large bowl, combine 2 pounds ground beef, 2 tbsp avocado oil, 1 cup tomato juice, 4 slices bread, 2 tsp sea salt, ¼ tsp ground black pepper, 2 tbsp Worcestershire sauce, 2 tbsp parsley2 Large eggs. Form into golfball size meatballs.
  • Brown the meatballs in a skillet over medium high heat until brown on all sides.
  • Mix 1½ pints cranberry sauce, 11½ tbsp lemon juice, and ½ cup Light Brown Sugar together in a medium bowl.
  • Add the meatballs to a 9×13 casserole dish and top with cranberry sauce.
  • Bake uncovered in a 375℉ oven for 40 minutes.
  • Alternative directions: Place in crockpot or slow cooker. Cook for 1-2 hours or until internal temperature reaches 160℉.
