For the soup:
- 3 pounds chicken breast (or chicken thighs)
- 1 yellow onion (diced)
- 1 red bell pepper (seeds removed and diced)
- 1 jalapeño pepper (seeds removed and minced)
- 4 garlic cloves (minced)
- 32 oz chicken broth
- 14½ oz diced tomatoes
- 10 oz can diced tomatoes & green chiles (or use fresh Anaheaim Peppers)
- 15 oz black beans
- 1 cup frozen corn
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp dried oregano
- Kosher salt and black pepper (to taste)
- 2 tbsp lime juice (about 1 lime worth)
Additional Soup Toppings
- fresh cilantro
- tortilla strips
- shredded cheddar cheese
- cotija cheese
- lime wedges
- lime crème
- avocado salsa
Instructions
- Add 3 pounds chicken breast to the bottom of a large crockpot. Then add the rest of the soup ingredients.1 yellow onion, 1 red bell pepper, 1 jalapeño pepper, 4 garlic cloves, 32 oz chicken broth, 14½ oz diced tomatoes, 10 oz can diced tomatoes & green chiles, 15 oz black beans, 1 cup frozen corn, 1 tsp garlic powder, 1 tsp cumin, 1 tsp smoked paprika, ½ tsp dried oregano, Kosher salt and black pepper, 2 tbsp lime juice
- Stir, cover and turn the crockpot on low, cooking until the chicken shreds easily, about 5-6 hours.
- Serve the soup hot with the optional toppings.
