For the soup:

  • 3 pounds chicken breast (or chicken thighs)
  • 1 yellow onion (diced)
  • 1 red bell pepper (seeds removed and diced)
  • 1 jalapeño pepper (seeds removed and minced)
  • 4 garlic cloves (minced)
  • 32 oz chicken broth
  • 14½ oz diced tomatoes
  • 10 oz can diced tomatoes & green chiles (or use fresh Anaheaim Peppers)
  • 15 oz black beans
  • 1 cup frozen corn
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • Kosher salt and black pepper (to taste)
  • 2 tbsp lime juice (about 1 lime worth)

  • Add 3 pounds chicken breast to the bottom of a large crockpot. Then add the rest of the soup ingredients.
    1 yellow onion, 1 red bell pepper, 1 jalapeño pepper, 4 garlic cloves, 32 oz chicken broth, 14½ oz diced tomatoes, 10 oz can diced tomatoes & green chiles, 15 oz black beans, 1 cup frozen corn, 1 tsp garlic powder, 1 tsp cumin, 1 tsp smoked paprika, ½ tsp dried oregano, Kosher salt and black pepper, 2 tbsp lime juice

  • Stir, cover and turn the crockpot on low, cooking until the chicken shreds easily, about 5-6 hours.
