When my son was 7 or 8, he began to experiment in the kitchen. One of his favorite things to do was make dipping sauce. He would blend some of the grosest things together and we would all smile trying not to squash his creativity. Well, we have upgraded our dipping sauces tramendously and it starts with this amazing Spicy Garlic Aioli.

For some reason our garden and climate in Mid-Missouri seems to produce a plethora of peppers. I’m talking 5 foot high plants loaded with bell peppers, jalapenos and the like. We always let the bumper crop of jalapenos towards the end of the year turn red, then smoke the jalapenos and create our own chipotle powder. You will see that I use this chipoltely powder if a lot of my recipes that call for a kick of spice. That is because it is so good.

Enjoy this Spicy Garlic Aioli on hamburgers, as a dipping sauce for french fries or as a spread for sandwiches.

Ingredients
  

  • 1 cup Primal Kitchen mayonnaise (or other seed oil free mayo)
  • 2 cloves garlic (minced)
  • 1 Tbsp lemon juice
  • 1 teaspoon chipotle powder (or cayenne pepper)
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Mix all the ingredients together in a bowl.
  • Serve with french fries or as a spread for sandwiches or hamburgers.
Notes
  • I make my own Chipotle Powder using jalapenos from my garden. You can substitue with Cayenne Pepper if you would like. Adjust to get the spiciness you desire.
