How to Make Fiesta Morning Hash
Follow these simple steps to create the ultimate breakfast hash:
Step 1: Prep and Roast the Potatoes
- Preheat your air fryer to 425°F.
- Toss diced potatoes with olive oil and a blend of garlic powder, onion powder, smoked paprika, cayenne pepper (optional), salt, and black pepper.
- Spread them evenly in an air fryer-safe pan and roast for 15 minutes. Flip, then cook for another 10 minutes until crispy and golden brown.
Step 2: Sauté the Vegetables
- Heat olive oil in a skillet over medium heat.
- Add diced onions and bell peppers. Sauté until the onions turn translucent and the peppers soften, about 4 minutes. Remove and set aside.
Step 3: Cook the Chorizo
- In the same skillet, add chorizo and cook until browned, breaking it into crumbles with a spatula.
Step 4: Cook Your Eggs
- Cook eggs your way: sunny-side-up, over-medium, or scrambled. Each style works beautifully for this dish.
Step 5: Assemble Your Hash
- In a serving bowl or skillet, layer roasted potatoes, sautéed veggies, and chorizo.
- Sprinkle with a mix of cheddar and Monterey Jack cheese.
- Top with cooked eggs.
Step 6: Add the Finishing Touches
- Garnish with lime crème, spicy ketchup, scallions, and sliced avocado for a vibrant and flavorful finish.
What are the best eggs for skillets and why?
- Over-Medium Eggs: This is my go-to because they are not super messy. Cook the eggs until the whites are fully cooked and the yolk is half runny and half cooked.
- Sunny Side Up Eggs: Prefer runny yolks? Cook your eggs sunny side up! These are perfect if you want the runny yolk to permeate the entire skillet, giving you that rich taste in every bite.
- Scrambled Eggs: Quick, easy, and cook evenly—scrambled eggs are a classic choice that works well with any breakfast dish.
