Whenever we make shrimp or fish tacos, I like to pair them with either this Grilled Pineapple Salsa or Mango Salsa. Personally, I think the grilled pineapple salsa is just a tad better. There’s something about those char marks and the caramelized sweetness from grilling the pineapple that sets it apart. It’s perfect on tacos or served as an appetizer with chips. Grill the Pineapple

Peel and core the pineapple, then cut it into slices about 1/2 inch thick. Brush them with olive oil and grill them for a few minutes on each side. Chope it up into little pieces.

Combine Everything

Add the bell pepper, red onion, jalapeno, cilantro,and lime juice. Give your pineapple salsa a good stir and let it sit for about 30 minutes before serving it with chips or on tacos.

Ingredients
  

  • 1 whole pineapple (peeled, cored, and sliced into rounds)
  • 1 tablespoon extra-virgin olive oil
  • 1 diced red bell pepper
  • 1 small minced red onion
  • 1 minced jalapeño pepper (seeded)
  • ¼ cup chopped fresh cilantro
  • 1 oz lime juice (2 tbsp, about 1 lime worth)
  • Salt and pepper to taste

Instructions
 

  • Preheat your grill to medium-high heat. Lightly brush the pineapple slices with olive oil.
  • Place the pineapple slices directly on the grill. Grill for 2–3 minutes on each side until you see nice grill marks and the pineapple starts to caramelize. Remove the pineapple from the grill and let it cool slightly.

  • Dice the grilled pineapple into small chunks. In a mixing bowl, combine the pineapple with 1 diced red bell pepper, 1 small minced red onion, 1 minced jalapeño pepper, and 1/4 cup chopped fresh cilantro.

  • Add 1 oz lime juice, a pinch of salt, and freshly ground black pepper. Stir well to combine all the flavors. Let the salsa sit for 10–15 minutes for the flavors to meld.
  • Serve with tortilla chips, grilled meats, or as a topping for tacos.

Frequently Asked Questions about Pineapple Salsa

Grilling the pineapple caramelizes the natural sugars and adds a smoky depth of flavor, but if you don’t have a grill, you can use a grill pan or even roast the pineapple in the oven. In a pinch, fresh raw pineapple works too—it will just be sweeter and less smoky.
