Sausage and Vegetables on a Bed of Cauliflour Rice on a White Plate

What you’ll need to make Hawaiian Maple Sausage & Veggies:

  • Sweet potatoes
  • Brussel sprouts
  • Bell peppers
  • Smoked cheddar sausages
  • Pure maple syrup
  • Pineapple tidbits + juice
  • Red pepper flakes
  • Cauliflower rice
  • Olive oil
  • Butter
  • Salt and pepper

Recipe Substitutions And Notes

  • Peppers: You can swap in any peppers you love. Or toss in some onions or any veggies you’ve got lying around.
  • Sausage: I used smoked cheddar sausage, but feel free to pick your favorite variety. Spicy, sweet, or regular sausage will all work here!
  • Onions: Got onions? Throw them in—they’re a great addition.
  • Rice: If cauliflower rice isn’t your thing, go ahead and use regular rice. I went low-carb and didn’t miss traditional rice one bit.

Step-by-Step Recipe: Hawaiian Maple Sausage and Veggies

Step 1: Toss your brussel sprouts and sweet potatoes with olive oil, salt, and pepper to season them perfectly. Spread them on a parchment-lined sheet pan and bake at 400°F for 15 minutes. This gives your veggies a head start, so they get that perfect roasted texture. The sweet potatoes will get tender, and the brussel sprouts will become crispy and caramelized.

Brushing Oil on Brussel Sprouts

Step 2: While the veggies roast, make your mouthwatering glaze. In a small saucepan, combine pineapple juice and pure maple syrup. Let it simmer over medium heat for about 10 minutes until it thickens slightly, turning into a sweet, sticky glaze with tropical vibes.

Step 3: Once the sweet potatoes and brussel sprouts have roasted for 15 minutes, add your smoked sausage and bell peppers to the pan. Pour half of the maple-pineapple glaze over everything and toss to coat the veggies and sausage in that sweet, tangy goodness.

Pouring Glaze over Sausage and Sheet Pan Veggies

Step 4: Pop the sheet pan back in the oven and bake for another 15 minutes. Your veggies will be perfectly caramelized, and the sausages will be golden and juicy. Drizzle the rest of the glaze on top for extra flavor, and serve it up with cauliflower rice (or regular rice if you prefer). The blend of smoky sausage, roasted veggies, and sweet tropical glaze will have everyone asking for seconds!
