Ingredients
  

  • 1 lb potatoes (cut into wedges (russet or yukon gold))
  • 2 tablespoon extra-virgin olive oil
  • 2 large chicken breasts
  • 2 tablespoon fresh herbs (such as rosemary, thyme, and oregano, chopped)
  • 4 tablespoon butter (melted)
  • 3 tablespoon lemon juice
  • zest of 1 lemon
  • 4 garlic cloves (minced)
  • salt and pepper (to taste)
  • ½ cup feta cheese (crumbled)
  • ½ cup sun-dried tomatoes (roughly chopped)

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, toss 1 lb potatoes, cut into wedges, with 2 tablespoon extra-virgin olive oil, salt, pepper, and half of your chopped herbs. Spread the potatoes in a large baking dish or sheet pan. Bake for 20 minutes.
  • While the potatoe are baking, in a small bowl, mix 4 tablespoon butter, 3 tablespoon lemon juice, zest of 1 lemon, 4 garlic cloves (minced), and 1 tbsp olive oil.
  • Butterfly 2 large chicken breasts. Season with 2 tablespoon fresh herbs, salt and pepper. When the 20 minutes is done, place the seasoned chicken pieces on top of the potatoes.
  • Pour half of the sauce over the chicken and potatoes. Bake for another 20-25 minutes or until the chicken is 165℉ and the potatoes are tender.
  • When the chicken and potatoes are nearly done, remove the pan from the oven, sprinkle ½ cup feta cheese and ½ cup sun-dried tomatoes over everything, and drizzle the remaining lemon garlic butter sauce on top. Return to the oven for 5-10 more minutes until the feta is slightly melted and the chicken is golden.
  • Garnish with fresh herbs and a squeeze of extra lemon juice if desired.
Substitutions
Feta Cheese: Replace with goat cheese for a creamy variation or Parmesan for a sharper taste.
Lemon: I found this dish had plenty of lemon flavor, but feel free to add more lemon juice and zest to taste!
