Pesto Chicken Pitas
Ingredients
- 2 cup shredded chicken
- ⅓ cup pesto (plus more for additional flavor)
- 3 tablespoon grated parmesan
- 4 pitas (cut in half)
- 1 cup caesar dressing
- romaine lettuce (enough leaves to line the pita)
- 1 cup cherry tomatoes (sliced in half)
- ½ cucumber (sliced thin)
Instructions
- In a bowl, mix chicken with pesto.
- Split the Pita and line both sides with romaine lettuce. and then add a few slices of cucumber along on side.
- Add pesto chicken, some cherry tomatoes and sprinkle with parmesan cheese.
- Drizzle with a little caesar dressing and serve.
