You’ve got to try these S’mores Homemade Waffles. Imagine homemade waffles that taste just like graham crackers—perfectly crispy on the outside and fluffy on the inside. Top them with gooey marshmallows and a drizzle of rich chocolate syrup, and you’ve got a breakfast that’s basically dessert.   • Preheat your waffle iron according to the manufacturer's instructions.
  • In a large bowl, whisk together 1 cup All-Purpose Flour, 1 cup Whole Wheat Flour, 2 tbsp Light Brown Sugar, 1 tbsp Baking Powder, 2 teaspoon Ground Cinnamon, ¼ teaspoon Nutmeg¼ teaspoon Ground Ginger and ½ teaspoon Salt.
  • In another bowl, beat 2 Large Eggs. Add 1¾ cup Buttermilk, ⅓ cup Butter, ¼ cup Honey, and 1 teaspoon Vanilla Extract. Mix until well combined. NOTE: If you don't have buttermilk, you can make a substitute by adding 1 tablespoon of lemon juice or white vinegar to regular milk and letting it sit for 5 minutes.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. NOTE: A few lumps in the batter are okay; over-mixing can make waffles tough and chewy.
  • Let the batter rest for 20-30 minutes. NOTE: Allowing the batter to rest can help the flour hydrate and lead to more tender waffles.
  • Gently fold the chocolate chips into the batter.
  • Lightly grease the waffle iron with non-stick spray or a small amount of oil. Pour the batter onto the hot waffle iron, using a ladle or measuring cup, and close the lid. Cook according to the waffle iron's instructions, usually about 3-5 minutes, or until the waffles are golden brown and crispy.
  • Carefully remove the waffles from the iron and serve immediately with your favorite toppings, such as syrup, butter, marshmallows, whipped cream, or a drizzle of extra chocolate syrup.
Notes
To save time, I often skip toasting the marshmallows, but toasting them really enhances the flavor. For the ultimate S’mores experience, top the waffles with both marshmallows and chocolate chips, then put them under the broiler for a very short amount of time. The broiler can be pretty intense, so watch them closely to prevent burning!
Letting the batter rest for 20-30 minutes before cooking can significantly improve the texture. This resting period allows the flour to hydrate, making the waffles more tender. Plus, it gives the baking powder a head start, which helps make the waffles even fluffier.
