Ingredients
  

  • 3 tbsp extra-virgin olive oil
  • 1 lb sirloin steak (or flank steak, cut into strips)
  • 2 tbsp cornstarch
  • salt and pepper (to taste)
  • 1 medium chopped red bell pepper
  • 1 large chopped onion (chopped)
  • 1 teaspoon orange zest (about half an orange worth)
  • ½ cup fresh squeezed orange juice
  • 5 tbsp coconut aminos
  • 3 tbsp Light Brown Sugar
  • 2 minced garlic cloves
  • 1 teaspoon rice vinegar
  • 1 teaspoon powdered ginger
  • ½ teaspoon cayenne pepper
  • 1 cup jasmine rice (uncooked)
  • 6 flour tortilla wraps

Instructions
 

  • Cook 1 cup jasmine rice according to package directions. Keep warm if serving immediately, or allow to cool if meal prepping.
  • In a bowl, combine 2 tbsp cornstarch with salt and pepper. Coat 1 lb sirloin steak in the cornstarch mixture until completely coated.
  • Heat 3 tbsp extra-virgin olive oil in a skillet until hot. Carefully add the coated beef and cook until crispy. Be sure not to overcrowd the pan; cook in batches if necessary. Once crispy and cooked through, use a slotted spoon to remove the beef from the pan.
  • In the same skillet with remaining oil, reduce heat to medium and add 1 medium chopped red bell pepper and 1 large chopped onion.
  • While the peppers and onions are cooking, prepare the sauce by mixing 1 teaspoon orange zest, ½ cup fresh squeezed orange juice, 5 tbsp coconut aminos, 3 tbsp Light Brown Sugar, 2 minced garlic cloves, 1 teaspoon rice vinegar, 1 teaspoon powdered ginger, and 1/2 teaspoon cayenne pepper in a separate bowl.
  • Pour the prepared orange sauce over the cooking vegetables. Increase heat and bring to a boil, then simmer for 1 minute. Add the cooked beef back into the pan, stir, and heat through for an additional minute.
  • To assemble the wraps, add rice and beef mixture to each tortilla wrap. Once the mixture is contained in the wrap, return it to the heated skillet for a minute or two to seal the edges and lightly toast the outside. Optionally, serve beef and veggies over rice.
Notes
If you are meal prepping these Spicy Orange Beef Burritos, allow the mixture to cool and thicken before assembling the wraps. After toasting the wraps, wrap them in plastic wrap and then aluminum foil. Place in freezer and consume within 6 months.
