  • 1¼ cups fresh strawberries
  • ¼ cup red onion
  • 1 small jalapeño
  • ¼ cup fresh cilantro (chopped)

  • â…“ cup orange juice
  • ¼ cup olive oil
  • 2 tablespoons Fresh Lime Juice (about 1 lime worth)
  • 2 tablespoons honey
  • 2 teaspoons apple cider vinegar
  • 1 egg yolk (acts as an emulsifier)
  • 1 teaspoon dijon mustard
  • Pinch of salt (adjust to taste)

Instructions
 

Strawberry Pico De Gallo

  • Finely dice 1¼ cups fresh strawberries, ¼ cup red onion and 1 small jalapeño. Chop ¼ cup fresh cilantro.
  • Combine the strawberries, red onion, jalapeno and cilantro in a bowl and set a side.

Strawberry Pico Vinaigrette

  • In a bowl, whisk together â…“ cup orange juice, 2 tablespoons Fresh Lime Juice, 2 tablespoons honey, 2 teaspoons apple cider vinegar, 1 egg yolk 1 teaspoon dijon mustard.
  • Pour the mixture into a blender or food processor and slowly add ¼ cup olive oil in a thin stream, until the dressing emulsifies and thickens. If the dressing becomes too thick, thin it with water, 1 tablespoon at a time.
  • Transfer back to the bowl, and fold in the Strwaberry Pico De Gallo. Season with a Pinch of salt.
Notes
To cut iceburg lettuce into wedges without it falling apart, make sure each piece has a wedge of the stem. Cut down the center from the stem side.
Use a lettuce cutting knife (they are special serated plastic knives) to cut the lettuce so it doesn’t oxidize and turn brown like it would with a metal blade.
