👩‍🍳 Homemade Cajun Seasoning for Chicken, Fries, Seafood & More

Let’s be honest—store-bought Cajun seasoning just doesn’t cut it. Half the time it’s too salty, too bland, or packed with preservatives you can’t pronounce. This homemade Cajun spice blend? Totally different story. It’s smoky, spicy, herby, a little sweet, and just the right amount of bold. Perfect for jazzing up chicken, shrimp, roasted veggies, pasta and fries.

I first whipped this up when I got hit with a craving for Cajun food and didn’t have a bottle on hand. Turns out, making your own spice blend is crazy easy and way more flavorful than anything off the shelf.

From Cajun chicken sliders to Cajun french fries to Cajun mayo and Cajun Aioli, this seasoning is super versatile. This stuff is magic on chicken, fish, shrimp, and roasted potatoes. Toss it with a little olive oil and coat your protein before grilling or pan-searing. Sprinkle it on fries before they hit the air fryer (and thank me later). Stir it into pasta sauces or mix it into ground turkey for the best Cajun burgers ever.

The best part about this Cajun blend? You can tweak it. Want it hotter? Add more cayenne. Need a low-sodium version? Just cut back on the salt. This is your spice mix, so go wild.

Whether you’re making Cajun Chicken Sliders, loaded Cajun Fries, or just spicing up a weeknight dinner, this seasoning blend brings big flavor with zero mystery ingredients. Give it a try and let me know what you think. Especially if you discover a new way to use it!

Notes
Use this seasoning to make creamy, zesty dip packed with bold flavor. It’s perfect for fries, chips, grilled veggies, or just about anything you want to dunk. To make it, mix ½ cup of sour cream with ¼ cup of mayo and stir in 1 to 1½ teaspoons of Cajun seasoning, depending on how spicy you like it. Add a splash of lemon juice or vinegar for a little tang, and if you want extra kick, toss in a pinch of garlic powder or a dash of hot sauce. Chill it for 15–20 minutes to let the flavors come together, then get dipping!
Substitutions
The combination of smoked and sweet paprika adds a lot of depth to this seasoning blend. If you only have one or the other, you can use the one you have for for both. I make my own smoked paprika and it is truly amazing.
Storage
Stored in an airtight container in a cool, dark place, this Cajun seasoning will stay fresh for up to 6 months. Just give it a sniff. If it smells bold and aromatic, it’s still good to go.

Why make homemade Cajun seasoning instead of buying it?

Homemade Cajun seasoning gives you full control over the flavor and spice level. No fillers, anti-caking agents, or mystery ingredients. Plus, it’s usually more cost-effective and fresher than store-bought blends.

How to Use Your Cajun Seasoning

This Cajun seasoning is a total flavor booster and works on just about anything that needs a little extra kick. It’s perfect for seasoning chicken whether its grilled, baked, or pan-seared. It brings bold, smoky heat to shrimp, fish, and even tofu. Toss it with oil and coat your protein for a quick blackened effect, or stir it into ground meat for Cajun burgers, meatballs, or tacos. It’s also fantastic on roasted vegetables like potatoes, sweet potatoes, cauliflower, or corn on the cob.

But don’t stop at the main dish. This blend shines in snacks and sauces too. Sprinkle it over homemade fries or popcorn, mix it into aioli, mayo, or sour cream for a quick Cajun dip, or stir it into creamy pasta sauces or mac and cheese for a spicy twist. Whether you’re cooking weeknight dinners or putting together party snacks, this Cajun spice blend adds bold, balanced flavor with minimal effort.

Need something for burgers or grilled meats? Try my Greek Burger Seasoning—it’s fresh, earthy, and loaded with Mediterranean-inspired flavor. Go for the fan-favorite Nashville Hot Chicken Rub if you want heat that lingers in the best way. My Chicken Seasoning is a reliable go-to for easy weeknight meals, while my Rowdy Ranch Seasoning adds a punch of garlicky, herby goodness to everything from fries to popcorn. For pork, my go-to is My Favorite Pork Butt Rub which is sweet, smoky, and made for slow cooking.

And if you’re into big flavor in soups or stews, my Fresh Vegetable Bouillon is a game-changer. Don’t sleep on the Jerk Seasoning either because it’s perfect for chicken, shrimp, or rice dishes when you’re craving Caribbean heat with depth.
