Ingredients
  

  • 2 teaspoons extra-virgin olive oil
  • 4 Medium Potatoes (chopped)
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • ½ teaspoon Cayenne Pepper
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • 1 pound Chorizo
  • 2 teaspoons extra-virgin olive oil
  • ½ Onion (chopped)
  • 1 Red Bell Pepper (chopped)
  • 8 Large eggs (any style)
  • ½ cup Cheddar and Monterey Jack Cheese
  • Spicy Ketchup
  • Lime Creme
  • 1 Smashed Avocado
  • 4 tablespoons Scallions

Instructions
 

  • Preheat air fryer to 425℉.
  • Combine 1 teaspoon Onion Powder, 1 teaspoon Garlic Powder, 1 teaspoon Smoked Paprika, ½ teaspoon Cayenne Pepper, ½ teaspoon Salt and ¼ teaspoon Pepper.
  • Chop 4 Medium Potatoes and coat in 2 teaspoons extra-virgin olive oil. Toss potatoes with the seasoning. Spread them onto an air fryer safe pan and air fry for 15 minutes or until the potatoes are browned and cooked through. Turn potatoes and cook an additional 10 minutes.

  • Heat 2 teaspoons extra-virgin olive oil in a skillet over medium heat. Add onion and bell pepper to the pan. Cook until onions are translucent, about 4 minutes.

  • Add 1/4 of the potatoes, 1/4 of the vegetables and chorizo to a bowl. Top with some of the cheddar and Monterey Jack Cheese. Add 2 cooked eggs. Serve with Spicy Ketchup, Lime Creme, smashed avocado and chopped scallions.
