👩‍🍳 Making Coffee Shop Iced Brown Sugar Latte’s at Home

I saw someone post on Instagram that their favorite drink was a brown sugar latte. I usually stick with coffee that isn’t sweet at all. Most of the time I order a plain latte or just coffee with half and half. Simple and no fuss. But that brown sugar latte kept popping into my head, so I figured I should give it a try.

When we took the family to 7 Brew, I ordered an iced brown sugar almond milk latte with vanilla cold foam. It cost a hundred dollars (just kidding, but if you know, you know). The drink was fine, a little sweeter than I like, but not terrible. It made me curious if I could make a version at home that wasn’t so sugary and didn’t cost as much.

I don’t own an espresso machine, but I did have some instant espresso left from the peppermint mocha cookies I made last Christmas. That seemed good enough to start with. All I needed was brown sugar simple syrup, which is easy to make on the stove with water and brown sugar. I liked that I could control how sweet it turned out. The recipe I landed on tasted just right to me, but it’s the kind of thing you can adjust until it fits your taste.

The latte from 7 Brew had vanilla cold foam, but I thought brown sugar cold foam would be even better. I played around with a few simple ingredients and whipped some up. Honestly, it turned out to be my favorite part of the whole drink.

Now this iced almond milk latte has become my go-to coffee at home. The funny part is it kind of ruined coffee shop brown sugar lattes for me. Starbucks makes a decent one, but I always have to ask for less than half the syrup, and they don’t have brown sugar cold foam. So if I’m craving it, I’ll just make it in my kitchen. When I’m out and about, I’ll stick with my usual plain coffee.

🛒 What You’ll Need to Make an Iced Brown Sugar Almond Milk Latte

  • Espresso – Instant or brew your own if you are one if you are one of the lucky ones.
  • Cold Water
  • Cold Almond Milk
  • Brown Sugar Simple Syrup
  • Ice
  • Brown Sugar Cold Foam

🥣 Step-by-Step Brown Sugar Almond Milk Latte

To start, make a simple syrup by stirring together equal parts brown sugar and water in a small saucepan. I usually use one cup of each and keep it in the fridge. Bring it to a gentle simmer and whisk until the sugar dissolves completely, then let it cool. Once cooled, pour it into a mason jar, screw on the lid, and keep it in the fridge. It will last about a month or more.

When you’re ready to make the cold foam, grab a small mason jar that works with an electric frother and add three tablespoons of cold heavy cream, two tablespoons of almond milk, 1 tablespoon brown sugar simple syrup, and ½ teaspoon pure vanilla extract. Froth it all together until it’s thick and foamy.

Now its time to make your easy brown sugar latte. Start by dissolving instant espresso in a cup of cold water right in a mason jar or your favorite iced coffee glass.

In a separate cup, stir a little brown sugar simple syrup into cold almond milk, then pour that creamy mix over the espresso. Add a handful of ice to chill it down, and finish it off with a generous spoonful of the brown sugar vanilla cold foam. Pop in a straw and you’ve got a refreshing iced latte that tastes just as good, if not better, than the coffee shop version.

Ingredients
  

  • 2 tbsp Instant Espresso (or brew your own)
  • 1 cup Cold Water (or if using your own brewed espresso, add enough water to make one cup)
  • 1 cup Cold Almond Milk
  • 1 teaspoon Brown Sugar Simple Syrup (See cold foam recipe step 1 above, for how to make it.)
  • 1 cup Ice
  • ½ cup Brown Sugar Vanilla Cold Foam (see above for recipe)

Instructions
 

  • Dissolve 2 tbsp Instant Espresso into 1 cup Cold Water in a large mason jar or your favorite iced-coffee cup.

  • Combine 1 teaspoon Brown Sugar Simple Syrup with 1 cup Cold Almond Milk. Pour over the top of the espresso. Add 1 cup Ice. Top with the ½ cup Brown Sugar Vanilla Cold Foam and serve with a straw.

Substitutions
Oat milk (or regular milk) can be substituted for the almond milk in this recipe. 

To make oat milk: Blend 1 cup of rolled oats with 3 to 4 cups of cold water until smooth, about 30 to 45 seconds. Pour the mixture through a fine mesh strainer, cheesecloth, or a clean kitchen towel into a bowl or pitcher. Chill it in the fridge and use it within 4 to 5 days.
Storage
This doesn’t store very well in my opinion but if you want to make it ahead, leave out the ice and the cold foam. Add those ingredients when you serve it.

Does the type of brown sugar matter?

It does. Dark brown sugar gives a richer, more molasses-like taste, while light brown sugar makes the latte a little more mellow and subtle.

I love starting my morning with a latte. In the winter, I whip up a Hot Peppermint Mocha Latte or a Hot Cinnamon Latte. Both are amazing!
