👩‍🍳Say Hello to Spring with This Lemon Blueberry Overnight French Toast

It’s officially spring🌷, and when spring rolls in, my taste buds start screaming for all things bright, fresh, and summery. Lately, I’ve been deep in a full-blown lemon blueberry obsession. So naturally, I decided to combine my love of French toast, my obsession with lemon and blueberry, and my eternal need for easy breakfast recipes… and boom: this scrumptious Lemon Blueberry Overnight French Toast Casserole was born. Pretty sure this one’s going to be on repeat all summer long.

It all starts with brioche, because when it comes to French toast casseroles, brioche is basically the gold standard. (Okay, I’ll admit, challah is a close second. If you haven’t tried my Pineapple French Toast Casserole yet, you’re missing out: think custard-soaked challah topped with caramelized pineapple, whipped cream, toffee sauce, and a sprinkle of cinnamon sugar. Yeah, it’s as dreamy as it sounds.)

Anyway, back to business. Once the bread is sorted, we’re piling in fresh blueberries, soaking everything in a sweet maple-cinnamon custard, and topping it off, straight from the oven, with a generous drizzle of lemon curd and a quick blueberry jam. Honestly? Lemon Blueberry Overnight French Toast is pure sunshine on a plate.

This Lemon Blueberry Overnight French Toast is a total winner for a lot of reasons. First off, anything you can throw together the night before and just pop in the oven the next morning gets a gold star from me. Goodbye, morning chaos—hello, leisurely coffee sipping. Plus, the oohs and ahhs I get when I serve this? Instant mood booster. It’s like starting the day wrapped in a cozy blanket of positive vibes.

And let’s be real: lemon blueberry is a flavor match made in heaven. Like sunshine and flowers. Or weekends and brunch. They just belong together.

So go ahead—whip this up tonight. Wake up tomorrow feeling like an absolute champion. Just me?

🥣 It’s easy to make Lemon Blueberry Overnight French Toast Casserole

Lemon Blueberry Overnight French Toast is what happens when buttery soft brioche, a dreamy lemony custard, and sweet, juicy blueberries all decide to throw a party. Top it off with warm maple syrup, a generous spoonful of lemon curd, and a quick blueberry jam that’s so good, you’ll be shamelessly reaching for seconds (or eating bites straight from the pan—no judgment).

Unbaked Lemon Blueberry French Toast Casserole

Start by layering brioche bread with fresh or frozen blueberries. Pour the custard over the top, cover tightly and let it sit in the refrigerator for at least 6 hours but up to overnight.

Next up: whipping up the fresh lemon curd and blueberry jam topping. Both come together in about 10 minutes, and trust me, it’s so worth it. Sure, you could grab a jar from the store… but let’s be real—preservatives are gross and homemade just makes you feel good.

Once it’s baking, you’ve got two options: swirl the lemon curd in during the last half of baking so it melts right into the French toast, or let everyone go wild and add as much as they want as a self-serve topping. Honestly, I’ve done it both ways. The photo shows it baked in (hello, golden deliciousness), but if we’re being real—I still can’t resist dolloping a little extra right on top of my slice. YOLO, right?

When its done baking, drizzle with lemon curd (if you haven’t already) and the blueberry jam topping. Serve it with whipped cream or a dusting of powdered sugar (or both, no judgement here).

Ingredients

  • 1 loaf brioche bread (cut into 1-inch cubes, or other day old bread)
  • cups fresh or frozen blueberries (don’t thaw if frozen)
  • 8 large eggs
  • 2 cups whole milk (or half and half for extra richness)
  • cup maple syrup
  • zest of 1 large lemon
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon (optional)
  • 1 pinch of salt

Lemon Curd

  • ½ cup fresh lemon juice (2–3 lemons)
  • zest of 2 lemons
  • ½ cup sugar
  • 2 large eggs
  • ¼ cup unsalted butter (cubed)
  • pinch of salt

Blueberry Topping

  • 1 cup blueberries (fresh or frozen)
  • 2 tablespoons water
  • 2-3 tablespoons sugar
  • ½ teaspoon vanilla
  • pinch of salt

Instructions

Make the French Toast Casserole

  • Cut 1 loaf brioche bread into 3/4-1 inch squares.
    Cutting Brioche Bread Cubes
  • Grease a 9×13-inch baking dish generously with softened butter. Add half of the brioche cubes in an even layer. Sprinkle with half the blueberries. Add the remaining bread cubes and top with the rest of the blueberries.

  • In a large bowl, whisk together 8 large eggs, 2 cups whole milk, ⅓ cup maple syrup, zest of 1 large lemon, 2 teaspoons vanilla extract, 1 teaspoon ground cinnamon, and 1 pinch of salt until smooth.
Lemon Blueberry French Toast Custard in Blender
  • Pour the mixture evenly over the casserole. Ensure all the bread is covered well with the custard.

Make Lemon Curd

  • In a small saucepan (off heat), whisk together ½ cup fresh lemon juice, zest of 2 lemons, ½ cup sugar, and 2 large eggs until smooth. Place over medium-low heat and stir constantly with a spatula until the mixture thickens and coats the back of a spoon, about 5–7 minutes.

  • Remove from heat and stir in ¼ cup unsalted butter and a pinch of salt until smooth. Let it cool slightly, then store covered in the fridge until ready to use. It will thicken more as it sits.

Make blueberry topping (optional)

  • In a small saucepan, combine 1 cup blueberries, 2 tablespoons water, 2-3 tablespoons sugar, and a pinch of salt. Bring to a simmer over medium heat. Stir occasionally and gently smash the berries. Let it cook for 8–10 minutes, or until it thickens up naturally.
  • Stir in ½ teaspoon vanilla, then let the sauce cool—it'll thicken up as it sits. Pop it in a mason jar, screw on the lid, and stash it in the fridge until you're ready to use it. I usually make it the day before so it's perfectly set and ready to go!

Bake

  • In the morning, preheat your oven to 350°F (175°C). Bake uncovered for 20 minutes.

  • Add small dollops of lemon curd on the top so each piece gets a little. Adding in after baking half way ensures the lemon curd won't cause the custard to curdle. Continue baking another 25-35 minutes until the top is golden and the center is set but still soft.

  • Serve warm with maple syrup. Additionally, top with leftover lemon curd, blueberry topping, whipped cream or a dusting of powdered sugar.

Notes
You don’t have to cube the bread if you don’t want to. You can layer the slices in the bottom, add some blueberries on top and pour the custard in between the layers.
Substitutions
Honestly, you can swap in whatever fruit you’re feeling. Strawberries or raspberries are my top picks—they’re total besties with lemon and taste amazing together.
If you want to switch up the bread, you’ve got some delicious options. Challah is a slightly richer swap for brioche—still soft, still perfect for soaking up all that creamy custard. And if you really want to go all out? Croissants are total indulgence. Flaky, buttery, and next-level good.
Storage
Cover and store in the refrigerator for 3-4 days.

Can I use frozen blueberries for this Lemon Blueberry Overnight French Toast?

Yes! Frozen blueberries are perfect here. No need to thaw them either—just toss them in frozen and they’ll bake up beautifully juicy and jammy inside the casserole.

How do I keep my overnight French toast casserole from getting soggy?

Two tips: use day-old or slightly stale brioche (it soaks up custard without falling apart), and don’t drown the bread. You want the custard to coat the bread nicely, but not pool like soup. This keeps the Lemon Blueberry Overnight French Toast perfectly creamy, not mushy.

Lemon Blueberry Overnight French Toast Caserole is the star but it needs friends for brunch

This Lemon Blueberry Overnight French Toast Casserole is already a total star on its own, but if you want to turn brunch into a full-on spread, a few extra sides will take it over the top.

For sides, I love adding something savory to balance out all that sweet goodness. Crispy bacon or sausage links are always a hit, and if you want homemade sausage that seriously levels up your brunch game, try seasoning it yourself with my Sausage Seasoning recipe! It’s packed with bold, savory flavors that pair perfectly with the sweet, citrusy vibe of this casserole.

A fresh fruit salad packed with strawberries, pineapple, kiwi, and extra blueberries keeps things bright and seasonal, and a simple spring greens salad with lemon vinaigrette is a perfect refreshing bite. Deep Dish Quiche With Ham and Gruyere or egg bites with spinach, feta, or even a hint of lemon zest add some extra protein to the table, and crispy roasted breakfast potatoes bring in that irresistible savory crunch.

Round it all out with something fun to sip on like fresh-squeezed orange juice, lemony iced tea, or even a light mimosa, and you’ve officially created the spring brunch of dreams.

Brunch is the best meal to prepare

If you’re loving the idea of a cozy, homemade brunch but want to switch it up from Lemon Blueberry Overnight French Toast Casserole, I’ve got you covered with some seriously tasty alternatives. Try my Rosemary Buttermilk Biscuits for a savory, herby twist that’s perfect with a pat of butter and a little honey. Craving something sweet and floral? Lavender Buttermilk Biscuits with Lemon Glaze bring the perfect touch of spring to your table. If you’re a sourdough fan, my Buttermilk Sourdough Biscuits deliver those rich, tangy layers you’ll be dreaming about.

For a fruity, fresh alternative, my Fruit Waffle Medley is a winner—crispy waffles stacked high with fresh fruit, maple whipped cream, and a dreamy cinnamon vanilla butter drizzle. Or go the cozy route with Banana Bread With Zucchini, which is moist, lightly sweet, and sneaks in a little veggie goodness. If muffins are more your vibe, you’ll love my hearty Banana Oat Muffins. If you like the muffin vibe, try spiced buttered rum apple cider muffins. Made with tender apples, warm spices, and a hint of rum.

And if you’re into lighter options, build a yogurt parfait station with creamy yogurt and either my Honey Oat Granola or Maple Syrup Granola with Oats, Seeds & Protein Powder for a crunchy, wholesome topping.

Need something a little heartier? A Breakfast Casserole loaded with eggs, cheese, and savory mix-ins is always a crowd-pleaser and just as easy to prep ahead of time.
