My kids go crazy for lasagna, except my youngest. He panics every time he thinks there might be leftovers waiting for him the next day. Loves lasagna, but he hates leftovers. However, he loves this lasagna soup anytime.
On busy nights, I don’t have an hour to build and bake a whole lasagna, so this lasagna soup saves the day. It’s packed with the same cozy flavors-Italian sausage, ground beef, herbs, and tomatoes-but comes together way faster. And honestly, the homemade ricotta dumplings steal the show. They’re soft, cheesy, and so good I’d never skip them.
It’s full of rich, comforting flavor without all the work. The ricotta dumplings are absolutely amazing. You get all the taste of lasagna in a bowl, and it’s done in a fraction of the time. Serve it up with crusty bread or garlic bread, and dinner’s done.

🥣 How To Make Lasagna Soup With Ricotta Dumplings
Start by browning the Italian sausage and ground beef together in a large soup pot or Dutch oven. Break them apart as they cook until no pink remains, then drain off any extra grease. Add the chopped onions and let them soften until translucent. Stir in the garlic, red pepper flakes, oregano, and basil, and cook just long enough for the garlic to turn fragrant.
Mix in the tomato paste and let it caramelize for a minute to deepen the flavor and create that rich lasagna base. Pour in the crushed tomatoes, diced tomatoes, and beef broth.
Bring everything to a simmer, then toss in the broken lasagna noodles. Let the noodles cook in the broth until tender, stirring now and then to keep them from sticking.
While the soup simmers, make the ricotta dumplings. In a bowl, stir together ricotta, Parmesan, eggs, flour, salt, and a pinch of nutmeg until the mixture forms a soft dough. Scoop small spoonfuls and gently drop them into the simmering soup. They will puff slightly as they cook and become light, cheesy bites.
Once the noodles and dumplings are cooked through, taste the broth and adjust with salt and pepper. Ladle the soup into bowls and top each with a sprinkle of mozzarella and a few fresh basil leaves.

Lasagna Soup With Ricotta Dumplings
Ingredients
For the Soup:
- 1 lb Italian sausage (mild or spicy, casing removed)
- 1 lb ground beef
- 1 medium chopped yellow onion
- 4 minced garlic cloves
- 1 tsp crushed red pepper flakes (optional, for heat)
- 1 tsp dried oregano
- 1 tsp dried basil
- 6 oz tomato paste
- 28 oz crushed tomatoes
- 15 oz diced tomatoes
- 6 cups beef broth
- 1 cup uncooked lasagna noodles (broken into pieces)
- salt and pepper (to taste)
For Ricotta Dumplings
- 1 cup ricotta cheese
- ¼ cup grated parmesan cheese
- 1 Large eggs
- ½ cup all-purpose flour (plus more if needed)
- ¼ tsp salt
- 1 Pinch nutmeg
For Garnish:
- ¼ cup grated parmesan cheese
- 1 cup shredded mozzarella cheese
- fresh basil leaves (for serving)
Instructions
- Heat a Dutch oven over medium heat. Add 1 lb Italian sausage and 1 lb ground beef, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Drain excess fat. Add 1 medium chopped yellow onion and 4 minced garlic cloves, cooking until softened, about 3 minutes.
- Stir in 1 tsp crushed red pepper flakes, 1 tsp dried oregano, 1 tsp dried basil, and 6 oz tomato paste. Pour in the 28 oz crushed tomatoes, 15 oz diced tomatoes, and 6 cups beef broth. Bring to a boil, then reduce heat to a simmer.
- Add 1 cup uncooked lasagna noodles, broken into bite-sized pieces, to the simmering soup. Cook for about 10 minutes or until tender. Stir occasionally to prevent sticking.
- Taste the soup and adjust salt and pepper as needed.
- In a bowl, combine 1 cup ricotta cheese, ¼ cup grated parmesan cheese, 1 Large eggs, ½ cup all-purpose flour, ¼ tsp salt, and a 1 Pinch nutmeg. Mix until a soft dough forms. Add more flour if the dough is too sticky.
- Using a teaspoon or small scoop, form the mixture into small balls. Drop the dumplings into a pot of gently boiling salted water. Cook until they float to the surface, about 2-3 minutes.
- Ladle the soup into bowls. Top with shredded mozzarella, fresh basil, and a sprinkle of grated parmesan.
- Serve with crusty bread or garlic knots for dunking.

Can I use a different type of pasta instead of lasagna noodles in lasagna soup?
You an use whatever noodles you want or have on hand. I like Lasagna noodles because they are classic, but penne, fusilli or even spaghetti works.
How do I know if the dumpling dough has the right consistency?
The dough should be soft but hold its shape when scooped. Add more flour, 1 tablespoon at a time, if it’s too sticky. Dip the spoon in the hot liquid before scooping it out and it comes off into the soup easily.
