In this update, I made one change to the soup by removing the water-Its wet enough-and adding a note to drain the fat after browning the sausage and bacon. I am working on some better images and will add those soon.

  • Pork Sausage: For a depth of flavor, I recommend using pork sausage. However, if you’re watching your diet, feel free to swap it for chicken or turkey sausage.
  • Onions: Yellow onions bring a sweet yet robust flavor, while red onions offer a milder taste.
  • Bacon: Brown the bacon first for that crispy goodness. I love to smoke it at 250°F for about 30 minutes. This method reduces fat while enhancing flavor!

🥣 Making this Loaded Potato Soup Recipe

  • ½ pound sausage
  • 1 medium onion (chopped)
  • 4 slices bacon (cut into small pieces)
  • 3 garlic cloves
  • 2 large carrots (chopped)
  • 2 stalks celery (chopped)
  • 2 large potatoes (cubed)
  • 2 cups chicken broth
  • 2 cups milk
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon dill
  • salt and pepper to taste

Instructions
 

  • In a large pot, add ½ pound sausage (use a tbsp of avocado or olive oil if using a lower fat sausage). Cook until sausage is no longer pink but not yet browned. Move sausage to the side of the pot and add 4 slices bacon and cook until crisp. Drain the fat from the pan.
  • Add 1 medium onion, 2 large carrots and 2 stalks celery and cook until onion is transluscent and vegetables are soft. Add 3 garlic cloves and cook until fragrant, about 1 minute.

  • Add 2 large potatoes, 2 cups chicken broth, 2 cups milk, 1 teaspoon thyme, 1 teaspoon rosemary and 1 teaspoon dill. Bring to a boil and reduce heat to simmer for 20-25 minutes or until potatoes are fork tender.

Notes
If your potatoes are starchy (like Russets), the soup will naturally thicken more. If you use Yukon Golds, the texture will be silkier and slightly lighter.
