Prep Cobb Salad With Me For Work Lunches

My father-in-law is a type 1 diabetic and cooking for him is stressful. Until I made him a build your own cobb salad and his blood sugar monitor stayed silent all night long. I decided that if it can keep his blood sugar neutral, it can keep my blood sugar neutral. So I started making this cobb salad a lot. The key, I think, is the easy homemade honey mustard dressing that is drizzled on top.

This is an excellent way to prepare work lunches. The versatility of Cobb salad ingredients ensures you can enjoy a different salad every time.

Here’s why I love this cobb salad!

  • You can cook up your own chicken or use rotisserie chicken like I did. Since the chicken isn’t the star of the meal, it can take a back seat to the veggies.
  • I read somewhere that instead of counting macros, you should count the number of different types of veggies you eat. This is loaded with them.
  • The honey mustard dressing on this cobb salad, is so freaking good.

Ingredients
  

  • 4 cups romaine lettuce (chopped)
  • 2 hard-boiled eggs (chopped)
  • 2 cups cooked chicken (diced or shredded)
  • 4 strips bacon (crispy and crumbled)
  • 1 avocado (diced or sliced)
  • ½ red bell pepper (chopped)
  • ½ cucumber (chopped and peeled (if desired))
  • 1 cup cherry tomatoes (halved)
  • ¼ cup cheese (feta or shredded cheddar are my faves)
  • ½ red onion (thinly sliced)
  • sunflower seeds
  • ½-¾ cup honey mustard dressing

Instructions
 

  • Prepare the ingredients.
  • Serve build-your-own style.
Substitutions
Use any veggies you want. One time I cleaned out my fridge and had everything from artichokes to peas on the table.
