My father-in-law is a type 1 diabetic and cooking for him is stressful. Until I made him a build your own cobb salad and his blood sugar monitor stayed silent all night long. I decided that if it can keep his blood sugar neutral, it can keep my blood sugar neutral. So I started making this cobb salad a lot. The key, I think, is the easy homemade honey mustard dressing that is drizzled on top.

Cobb Salad
Ingredients
- 4 cups romaine lettuce (chopped)
- 2 hard-boiled eggs (chopped)
- 2 cups cooked chicken (diced or shredded)
- 4 strips bacon (crispy and crumbled)
- 1 avocado (diced or sliced)
- ½ red bell pepper (chopped)
- ½ cucumber (chopped and peeled (if desired))
- 1 cup cherry tomatoes (halved)
- ¼ cup cheese (feta or shredded cheddar are my faves)
- ½ red onion (thinly sliced)
- sunflower seeds
- ½-¾ cup honey mustard dressing
