It started as a simple chicken noodle soup and has evolved into an immune boosting soup that keeps my family healthy. I sweat it reduces the amount of time we are sick when we are. I grew up on soup. My dad was pretty much famous for his vegetable soup, at least in our house he was. He made a big pot every winter and we would eat the leftovers for days. Now I have carried on the tradition with my own family. My kids love tomato soup with grilled cheese, but for me a classic chicken noodle soup is the ultimate comfort food.

This is the chicken soup recipe I have been making for years, especially when colds or flu start moving through the house. One day when our middle daughter was home sick, I stayed in with her and made a big pot of this chicken and noodle soup. That was the day I knew it needed a spot on the blog. It has become our family remedy, full of ingredients that support the immune system and help us bounce back faster. The broth is rich and golden, the veggies add sweetness and depth, the chickpeas bring extra nutrition, and the noodles make it so satisfying.

🥣 How To Make Chicken Noodle Soup

Start by setting a large pot or Dutch oven on the stove over medium heat and drizzle in some olive oil. Once the oil is warm, add chopped onion, celery, carrots, and fennel. Stir them around every so often until they begin to soften and smell fragrant. You’re looking for the onions to turn a little translucent and the veggies to lose that raw bite.

Next, toss in the sliced mushrooms and minced garlic. Keep stirring so the garlic doesn’t burn. The mushrooms will release some of their moisture and start to brown a bit, which deepens the flavor of the broth.

Once everything is softened and golden in spots, pour in the chicken stock. Add a couple of bay leaves, a sprinkle of turmeric, crushed red pepper if you want some heat, and fresh rosemary and thyme. Season with salt at this stage so the flavors have time to soak into the broth. Stir well, then bring the pot up to a gentle boil.

Mix in the chickpeas, shredded chicken, and egg noodles. Give everything a good stir so nothing sticks to the bottom. Cover the pot, lower the heat, and let the soup simmer. You’ll know it’s ready when the noodles are tender and the chickpeas are soft but not mushy. This usually takes just long enough for all the flavors to come together in the broth.

Before serving, fish out the bay leaves and taste the broth. Adjust the seasoning if needed with a little more salt or spice. For an extra immunity boost, stir in a handful of spinach or kale near the end of cooking. They’ll wilt right into the soup without overpowering it.

  • 2 tbsp extra-virgin olive oil
  • ½ medium onion (chopped)
  • 3 large celery stalks (chopped)
  • 2 large carrots (peeled and chopped)
  • 1 fennel bulb (chopped)
  • 1 cup mushrooms (sliced)
  • 10 garlic cloves (minced)
  • 8 cup chicken stock
  • 2 bay leaves
  • ½ teaspoon turmeric
  • ½ teaspoon crushed red pepper
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh thyme
  • teaspoon sea salt
  • cup chickpeas (Quick soaked if using dried)
  • 3 cup shredded chicken
  • 6 oz egg noodles

Instructions
 

  • In a large pot or dutch oven, heat 2 tbsp extra-virgin olive oil over medium-high heat and sauté ½ medium onion, 1 fennel bulb, 3 large celery stalks and 2 large carrots, stirring occasionally, about 5 minutes. Add 1 cup mushrooms and 10 garlic cloves, cooking another 3 minutes.
  • Stir in the 8 cup chicken stock, 2 bay leaves, ½ teaspoon turmeric, 1 teaspoon fresh thyme, 1 teaspoon fresh rosemary, ½ teaspoon crushed red pepper (optional), 1½ teaspoon sea salt and 1½ cup chickpeas; bringing to a boil. Mix in 3 cup shredded chicken and 6 oz egg noodles. Cover and turn down heat to a simmer for 15 to 20 minutes.
  • Discard bay leaves, serve and enjoy!
Substitutions
Whole Wheat Noodles can be replaced by quinoa, brown rice, or barley for a heartier, gluten-free alternative.
For extra immunity support, you could also toss in Spinach or Kale for extra vitamins.
Storage
Homemade chicken soup will keep well in the fridge for about 3 to 4 days if stored in a sealed container. Just make sure the soup cools completely before you pop it in the fridge.
If you’ve added noodles, they’ll soak up broth and get softer as the days go on. If you want leftovers to taste fresh, store the soup and noodles separately and combine them when reheating.

Reheat gently on the stove over medium heat, and add a splash of broth or water if it has thickened.

What’s the best way to get deeper flavor in the broth?

Do I have to use chicken, or can I swap the protein?

Absolutely. Turkey, shredded rotisserie chicken, or even white beans or lentils can stand in if you want a vegetarian option.

Can I make this in the slow cooker or Instant Pot?

Yes. For the slow cooker, sauté the onions, garlic, and mushrooms first, then transfer everything except the noodles into the slow cooker and cook on low heat for six to eight hours. Add the noodles at the very end for 10-15 minutes to soften. For the Instant Pot, use the sauté function for the veggies, add the stock and seasonings, then cook on high pressure for about twelve minutes and release the pressure right away. Stir in the noodles at the very end so they do not get mushy.

For a bright finishing touch, sprinkle fresh herbs like parsley, dill, or thyme over each bowl of chicken noodle soup, or add a squeeze of lemon juice to bring out the earthy flavors of the soup.
