It was good but I used cherry tomatoes which didn’t really fit into the pita well and the images were not that good (I was new to this ok, sue me lol). Plus my family had a lot of opinions. This version is updated with all the things I learned since starting to make these almost a year and a half ago.

Ingredients
  

  • 2 pitas (cut in half)
  • 2 chicken breasts
  • 4 tablespoons Greek Burger Seasoning
  • 2 teaspoons olive oil
  • cup basil pesto (plus extra, if you love it saucy)
  • romaine lettuce
  • ½ cucumber (sliced thin)
  • ½ tomato (sliced to fit inside pita)
  • cup caesar dressing (for drizzling)
  • 3 tablespoons grated parmesan (for sprinkling on top)

Instructions
 

  • Slice 2 chicken breasts in half horizontally. Season both sides generously with Greek Seasoning.
  • Set a skillet over medium-high heat. Once it’s hot, add 2 teaspoons olive oil. Place the chicken in the pan and cook for 5–6 minutes per side, or until it’s deeply golden and the internal temp reaches 165°F.

  • Smear the inside of each pita half with pesto—use more if you're a pesto lover. Add chicken, lettuce, cucumber, and tomato inside the pita pocket. Drizzle with Caesar dressing and sprinkle parmesan over the top. Serve immediately!

Chicken Alternatives:
  • Rotisserie Chicken: Shred warm or chilled rotisserie chicken with two forks and use as is—no cooking required.
  • Crispy Chicken (optional): Coat chicken cutlets in seasoned breadcrumbs, bake or pan-fry until golden and cooked through, then slice and serve.
Substitutions
You can totally use feta instead of parmesan. Add pickled red onions for a tangy flavor.
Storage
Store the parts to the pita seperately in air tight containers in the fridge for 4-5 days. Assemble when you want to make a pita.
