There used to be (maybe still is?) a restaurant in downtown Columbia, MO that made Rosemary Vingar french fries that were so amazing. I went there for work like five years ago and now can’t remember which restaurant it was.
I have worked really hard to learn how to make crispy, not burnt french fries in the air fryer. For these beauties, I soak them in vinegar water first to give it tons of flavor. Then dry and air fry them. While they are still hot we add ground rosemary (do this with a morter and pestle if you need to grind yours) and drizzle some more vinegar on them. Its a great way to flavor fries.
These are geat alongside a cheeseburger with all the toppings or my favorite (which coincidently I have not added to the blog) a Black and Bleu Burger. Let me know what your favorite french fry flavor is in the comments.

🥣 Making Air Fryer French Fries with Vinegar and Rosemary
Start by peeling your russet potatoes and slicing them into even French fry sticks. First trim off a little bit of each side. Leave some skin for texture and flavor. Slice down into even slices and then slice the slices into strips.
Place them in a large bowl and cover with cold water, then stir in white vinegar. Let the potatoes soak for at least 30 minutes to remove extra starch and help them crisp up in the air fryer.
When you’re ready to cook, drain the fries and pat them completely dry with a clean kitchen towel or paper towels.
Using a mortar and pestle, grind sea salt and rosemary until the herb is tinier. Toss them with avocado oil until every piece is coated.
Preheat your air fryer to 400°F. Arrange the fries in a single layer, working in batches so they don’t touch or overlap. Air fry until golden and crispy, flipping once about halfway through to ensure even cooking.
Once hot and crisp, transfer the fries to a bowl. Sprinkle them with ground rosemary and kosher salt, then splash in a little more white vinegar for that signature tang. Give everything a quick toss so the flavors stick to each fry.
Serve your crispy rosemary vinegar fries right away with a side of garlic aioli for dipping.

- 2 pounds russet potatoes (peeled and cut into french fries)
- 1 cup white vinegar
- cold water
- 1-2 tbsp avocado oil
- 2 teaspoon white vinegar
- 2 teaspoon ground rosemary
- 2 teaspoon kosher salt
Instructions
- In a bowl, place 2 pounds russet potatoes, peeled and cut into French fries and cover them with cold water. Add 1 cup white vinegar and soak for 30 minutes to 1 hour.
- Preheat your air fryer to 400 degrees Fahrenheit. After soaking, drain the fries and pat them dry with a paper towel. Toss them with 1-2 tbsp avocado oil.
- In batches, air fry the French fries for 30 minutes, flipping halfway through and ensuring they do not touch for the best results.
- Once cooked, toss the fries with 2 teaspoon white vinegar, 2 teaspoon ground rosemary, and 2 teaspoon kosher salt for a burst of flavor.
- To complete the dish, serve your crispy air fryer French fries with garlic aioli.
