Easy Hamburger Recipe with Roasted Garlic

August 2025 update: I first shared this recipe back in February 2024, and my love for this burger hasn’t faded one bit. I did give the post a little glow-up though and added serving suggestions, more details, and links to other recipes you might like. I’ve always been a fan of hamburgers, which is probably why there are so many burger recipes on my blog. Every year we stock the freezer with ground beef, and every year I swear we’ll never get through it all. But somehow we do. Between quick weeknight dinners, summer grilling, and weekend cookouts, hamburgers always seem to disappear fast. Most of us love them, though our middle kid still can’t stand burgers. I don’t get it, but it just means more for the rest of us.

What makes a good hamburger even better is garlic. Roasted garlic brings out this sweet, nutty flavor that blends right into the beef and takes a simple burger to the next level. Fresh garlic powder and onion powder give extra depth, and a little cayenne keeps things interesting. Garlic isn’t just about taste either. It’s got a reputation for being good for your immune system and even helping with heart health. So you can feel a little better about loading up that burger bun.

  • Roasted garlic: Roasting takes away the sharp bite and leaves you with something sweet and savory that blends right into the beef.
  • Ground beef: I like an 80/20 mix because the extra fat keeps the patties juicy and flavorful without drying out on the grill.
  • Garlic powder
  • Onion powder
  • Cayenne pepper
  • Burger buns: If you’ve got extra time, make these hamburger buns or if you want a really fancy looking burger make some pretzel buns (my families personal favorites)
  • Cheddar gives a sharper bite, Swiss melts creamy and smooth, and American keeps it classic with that diner-style melt.
  • Crispy bacon (optional). The easiest way is in the oven. Lay the strips on a baking sheet and bake at 350°F for 15 to 20 minutes. Start checking at 15 because bacon can burn fast.

🥣 Step-by-Step Instructions for the Best Roasted Garlic Hamburgers

Start by preheating your oven to 400℉. Take a whole head of garlic and cut about a quarter inch off the top so the cloves peek through. Set it on a piece of foil, drizzle it with olive oil, and give it a light sprinkle of salt and pepper. Wrap it up and place it on a baking sheet, then roast it for about half an hour until the cloves are golden, soft, and caramelized. Let the garlic cool a little before unwrapping since the steam can be intense. Once it’s cool enough to handle, squeeze the cloves out of their skins or scoop them with a fork and mash them into a paste.

In a large mixing bowl, combine the ground beef with the mashed roasted garlic, garlic powder, onion powder, cayenne, salt, and black pepper. Use your hands to gently mix everything together but stop as soon as it looks evenly blended. Overmixing can make the patties tough. Divide the meat into even portions and shape them into patties about half to three-quarters of an inch thick. Make them a little wider than your buns since they’ll shrink on the grill. Press your thumb into the center of each patty to make a small indentation so they cook evenly without puffing up in the middle. Pop the patties in the fridge for about thirty minutes to firm up while you get the grill or skillet ready.

Heat your grill, air fryer, or a cast iron skillet over medium-high heat until it’s nice and hot. Cook the patties for three to four minutes per side if you like them medium-rare to medium, or go a little longer if you prefer them more done. For cheeseburgers, add a slice of cheese during the last couple minutes of cooking and cover the pan or close the grill lid so it melts into the meat. While the burgers are cooking, prep your toppings—wash and slice lettuce, tomato, and onion so everything is ready to stack.

When the burgers are done, take them off the heat and let them rest for five minutes. This keeps the juices from running out when you bite into them. Place each patty on a toasted bun, pile on your toppings and condiments, and build the burger the way you like it.

Ingredients
  

  • 1 head of garlic
  • ¼ teaspoon extra-virgin olive oil
  • 2 lb ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne powder
  • ¾ teaspoon salt
  • ¾ teaspoon pepper
  • Optional toppings: Burger buns, cheese slices, lettuce, tomato, onion, pickles, pickled red onions, condiments (ketchup, mustard, mayo, or aioli), bacon and any other preferred toppings

Instructions
 

  • Preheat oven to 400℉.
  • Cut about ¼ inch off the tops of the garlic bulb to reveal the cloves. Place it on a large piece of aluminum foil. Drizzle with olive oil and sprinkle with salt and pepper. Wrap the garlic in the foil and place it on a baking sheet. Roast in the preheated oven for 30-40 minutes, or until the cloves are soft and golden brown.
  • Allow the roasted garlic to cool for a few minutes. Carefully unwrap the foil—watch out for hot steam! Once cool enough to handle, squeeze or use a fork to pop out the soft cloves from their skins. Mash them with a fork.
  • In a large bowl, combine the ground beef with the mashed garlic, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp cayenne powder, and salt and pepper. Mix gently with your hands to avoid overworking the meat, which can lead to dense burgers.
  • Divide the seasoned meat into equal portions and shape them into patties that are ½-¾ inch thick. Make them slightly larger than your burger buns since they’ll shrink while cooking. Use your thumb to create a small indentation in the center of each patty. Refrigerate for 30 minutes to chill.
  • Get your grill, air fryer, or skillet hot over medium-high heat for a perfect sear.
  • Place the chilled patties on the hot grill, air fryer, or skillet. Cook for about 3-4 minutes per side for medium-rare to medium doneness. Adjust the cooking time based on your preference.
  • For cheeseburgers, place a slice of cheese on each patty 1-2 minutes before they finish cooking. Cover the grill or skillet to melt the cheese.
  • While the burgers are cooking, wash and slice your favorite toppings, like lettuce, tomato, and onion.
  • Once cooked to your liking, remove the burgers from the heat and let them rest for 5 minutes. Place each burger on a bun and add your chosen toppings and condiments. Enjoy!

As far as toppings go, burgers are flexible, so start with classics like lettuce, tomato, cheese, bacon, pickles, and onions. For something different, try avocado, pickled red onions, pesto, onion straws, barbecue sauce, or garlic aioli.
Swap buns to change the vibe: pretzel, Hawaiian, potato, whole wheat, or classic white all work. For a lighter option, wrap your burger in lettuce instead.

How do I know when my hamburger is done?

The easiest and most reliable way is with a meat thermometer. Slide it into the thickest part of the patty and check the temperature. Once you pull the burgers off the heat, let them rest for a few minutes since the temperature will rise a bit more and lock in the juices.

  • For medium-rare, look for about 145°F, where the center is warm and still a little pink.
  • Medium is around 160°F, giving you a juicy patty with just a hint of pink in the middle.
  • Well-done is 165°F, where the meat is fully cooked through and brown all the way.

Do I have to chill the patties before cooking?

Chilling helps the patties hold their shape and keeps them from falling apart on the grill. If you’re in a hurry, you can skip it, but even 20 minutes in the fridge makes a difference.
