My husband and I have this dream that one day we’ll sail our boat to the Mediterranean and spend a few months a year just island hopping through what I can only imagine is the most beautiful place on Earth. I swear half the reason I’m obsessed with this dream is the food — fresh olives, creamy feta, juicy tomatoes, flaky fish… ugh, just thinking about it makes me want to pack my bags.
Until that day comes, I’m bringing a little taste of it home with this Mediterranean Chicken Pizza. And not to brag, but this is hands down the best pizza I’ve ever made. Like, not even close.
This Mediterranean Chicken Pizza is packed with so much flavor — think crispy crust, gooey mozzarella, tender chicken (season it with my Greek Burger Seasoning for amazing flavor), briny olives, sweet sun-dried tomatoes, tangy feta, and a sprinkle of fresh spinach and herbs to brighten it all up. Every bite tastes like summer by the sea.

Creating this Mediterranean Chicken Pizza is simple and rewarding. Start with your choice of pizza dough—homemade or store-bought. Roll it out into your desired shape and thickness, then transfer it to a pizza stone or a baking sheet lined with parchment paper.
Prepare the Pizza Base: Preheat your oven to a high temperature, typically around 475°F (245°C). If using a pizza stone, place it in the oven to preheat as well.
Add Sauce: Spread a generous layer of pizza sauce over the rolled-out dough, leaving a small border around the edges for a nice crust.
Layer the Toppings: Evenly distribute the seasoned shredded chicken and chopped sun-dried tomatoes over the sauce. Next, sprinkle the shredded mozzarella cheese generously, followed by crumbled feta cheese, sliced black and green olives, and thinly sliced red onion.
Season and Drizzle: Sprinkle with dried oregano and basil for a burst of flavor. Drizzle a bit of olive oil over the top to enhance richness. Then top it with some torn spinach leaves.
Bake to Perfection: Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Finish with Freshness: For an extra touch, scatter fresh spinach leaves on top of your Mediterranean Chicken Pizza right before baking.

Ingredients
- 1 pizza crust
- 1 cup cooked chicken breast (See Notes (Greek Burger Seasoning))
- 1 cup pizza sauce
- 1½ cup shredded mozzarella cheese
- ½ cup crumbled feta cheese
- ¼ cup sliced black olives
- ¼ cup sliced green olives
- ⅓ cup sliced sun-dried tomatoes
- ¼ cup thinly sliced red onion
- ½ cup chopped fresh spinach or baby spinach
- 1 tbsp extra-virgin olive oil
- 1 tsp dried oregano
- ½ tsp dried basil (or use a few fresh leaves)
- Salt and pepper to taste
Instructions
- Preheat oven to 475℉. If you are using a pizza stone place it in the oven to preheat.
- Spread a thin layer of pizza sauce over the dough, leaving a small border around the edges.
- Evenly distribute the shredded chicken over the sauce. Sprinkle with mozzarella cheese, then add the feta cheese, black and green olives, sun-dried tomatoes, and red onion.
- Sprinkle with dried oregano, dried basil, salt, and pepper. Drizzle with olive oil.
- Scatter the chopped spinach on top of the pizza.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
