Every bite had us grinning and saying, “This is crazy good.” And yes, I definitely went back for seconds… and thirds.

There’s a lot to love about these seafood stuffed baked potatoes. First, they’re easy to make. You’re basically baking potatoes, stirring up a creamy seafood and cheese filling, and letting the oven do the heavy lifting. 🥣 Making Seafood Stuffed Baked Potatoes

Scrub the potatoes clean, prick them with a fork, rub with olive oil and salt, and bake at 425°F for 45-60 minutes until tender.

Pimientos Stirred into Seafood Dip

In a large bowl, stir together the cream cheese, shrimp, smoked salmon, cooked fish, heavy cream, cheeses, pimientos, chives, and seasonings until creamy and well combined.

Spread the seafood mixture into a greased baking dish, top with a little extra cheese, and bake for about 20 minutes, until melted and bubbling.

Ingredients
  

For the seafood filling:

  • 8 ounces cream cheese (room temperature)
  • 4 ounces fully cooked shrimp (chopped)
  • 4 ounces smoked salmon (chopped)
  • 4 ounces fully cooked fish of your choice (chopped)
  • ½ teaspoon cayenne pepper
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup heavy whipping cream
  • cups Provel cheese (shredded)
  • 4 ounces smoked cheddar cheese (shredded)
  • 4 ounces smoked gouda cheese (shredded)
  • ½ cup pimientos (chopped)
  • 1 teaspoon chives (chopped)

For the potatoes:

  • 4 large russet potato bakers (or Yukon Gold if you like a creamier texture)
  • 1-2 tablespoons olive oil (or melted butter)
  • 1-2 teaspoons Kosher salt

Instructions
 

Bake Potatoes

  • Preheat your oven to 425℉.
  • Scrub 4 large russet potato bakers clean and dry them really well with a towel. Prick each potato 4-6 times with a fork (to let steam escape). Rub each potato lightly with olive oil and sprinkle generously with kosher salt.
  • Place the potatoes directly on the oven rack, or use a baking sheet for easier cleanup. Bake for about 45-60 minutes, depending on size. Medium potatoes take around 50 minutes. Really big ones might need closer to an hour.

Make Seafood Filling

  • In a large mixing bowl, add 8 ounces cream cheese. Stir in the chopped shrimp, smoked salmon, and fully cooked fish. Mix until well combined, breaking up the seafood as you combine.

  • Pour in 1 cup heavy whipping cream and add 1 cup Provel cheese, 4 ounces smoked cheddar cheese, and 4 ounces smoked gouda cheese. Stir until everything is well combined.

  • Fold in ½ cup pimientos and 1 teaspoon chives, ensuring an even distribution. Season the mixture with ½ teaspoon cayenne pepper, 1 teaspoon salt and ½ teaspoon black pepper, mixing thoroughly.

  • When the potatoes have 20 minutes left, pop the seafood filling into the oven for 20 minutes or until the cheese is bubbly and golden. Remove from oven and keep warm.

  • The potatoes are done when you can easily pierce them with a fork or squeeze them and they feel soft inside. Slice a small slit across the top, give them a gentle squeeze to fluff up the inside, and pop them back into the oven for 5-10 minutes.
  • Fill with seafood dip and serve warm. These are great with garlic bread.

Notes
Pop it under the broiler for a few minutes to brown it up and create a top crust because it adds so much flavor.
Substitutions
I like to also add in some roasted red peppers. The kind that come in the jar. Chop them up and throw them in also for a little extra sweet flavor.
Want it hotter? Stir ½ to 1 teaspoon of crushed red pepper flakes into the seafood filling. It’ll give you a nice, steady heat without overpowering the creamy cheese flavor.
Fish Options:
  • Tilapia (great choice, mild, easy to find, and cooks quickly)
  • Cod (flaky, clean flavor, very classic)
  • Haddock (a little sweeter than cod, very tender)
Storage
Cool completely, then store any leftover seafood stuffing in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F until warmed through to keep the outside crispy and the filling creamy.
