Sliders are hands down one of my favorite weeknight meals. They’re quick, satisfying, and way more fun than a regular sandwich. Toasted, bite-sized, and packed with bold flavor, they check all the boxes. So when I got the urge to make a spicy Cajun chicken sandwich, turning it into sliders was a no-brainer. Enter: my Cajun Chicken Sliders.
These little guys bring everything you want in a spicy Southern-style chicken sandwich. We’re talking tender chicken seasoned with my homemade Cajun spice blend. It’s smoky, herby, and just the right amount of heat, with a little sweetness tucked in to keep things balanced. Then come the toppings: melty pepper jack cheese, juicy tomato slices, and bread and butter pickles (arguably the best pickle pairing for anything spicy). And to tie it all together? A creamy Cajun mayo that’s packed with flavor and so easy to make.
Everything gets layered inside soft slider buns, then baked in the oven just long enough to get everything warm, melty, and golden around the edges.

🥣 Making Cajun Chicken Sliders
Cut the chicken thighs into medallion-style pieces. While this isn’t totally necessary, but it makes them easier to pull apart later. Season the chicken generously with Cajun seasoning, then cook in a skillet over medium heat until golden brown and cooked through.
Slice your slider buns in half horizontally. Layer on the pepper jack cheese, then the cooked chicken, followed by sharp cheddar, tomato slices, and pickles. Add the top buns, brush them with melted butter, and sprinkle sesame seeds over the top.
Bake at 375°F for 12–15 minutes, or until the cheese is melted and the buns are golden and toasty. Serve warm and enjoy!

Ingredients
- 1½ lbs boneless skinless chicken thighs
- 2 tablespoons olive oil
- 3 tablespoons Cajun seasoning
- 12 slider buns (like Hawaiian rolls, brioche buns, or potato rolls)
- 6 slices of pepperjack cheese
- 6 slices of sharp cheddar cheese
- 1 tablespoon butter (melted for brushing on top)
- 1 tablespoon sesame seeds
- Toppings: thinly sliced tomato and bread and butter pickles
Instructions
- Slice 1½ lbs boneless skinless chicken thighs in half horizontally, then cut into medallions. Keep in mind they’ll shrink as they cook. You want pieces that fit neatly on the slider buns without hanging over. This also makes separating the sliders easier after baking.
- Toss the chicken medallions with Cajun seasoning until fully coated. Heat olive oil in a skillet over medium-high heat, then fry the chicken until golden brown and cooked through. Set aside.
- Preheat your oven to 350°F. Slice the slider buns in half horizontally as one piece (don’t separate the individual buns). Lay the bottom half in a baking dish. Layer with pepperjack cheese, then add the cooked chicken, then sharp cheddar.
- Top with sliced tomato and bread and butter pickles. Place the top buns back on.
- Brush the tops with melted butter and sprinkle with sesame seeds.
- Bake for 12–14 minutes, or until the cheese is melted and the tops are golden brown.
- Serve with coleslaw, Cajun Fries, or grilled corn salad.

- Oven (Best Method): Preheat to 350°F, place the sliders on a baking sheet, and loosely cover with foil. Bake for 10–12 minutes (longer if frozen) until hot and melty.
- Air Fryer: Pop them in at 350°F for 4–5 minutes. This is perfect if you like the buns to get a little crispy.
- Microwave: Not ideal, but it works in a pinch. Wrap a slider in a damp paper towel and heat for about 45 seconds to 1 minute. It keeps the bun from drying out.

Yep! Just make sure to slice them thin so they cook quickly and stay tender. Thighs do have more flavor and stay juicier, though.
Do I have to slice the chicken into medallions?
