- 1 teaspoon Monk fruit sweetener
- ¼ teaspoon celery seed
- salt + black pepper (to taste)
For the homemade Buffalo Sauce:
- ¾ cup hot sauce
- ½ cup butter
- 1½ tablespoons white vinegar
- ¼ teaspoon Worcestershire sauce
- ¼ teaspoon cayenne
- ⅛ teaspoon garlic powder

- 4 ounces gorgonzola (crumbled)
- 4 ounces cream cheese (softened)
- 2 tablespoons sour cream
- 2 teaspoons honey
- 1 pinch red pepper flakes

Instructions
Make Buffalo Sauce:
- Preheat a large saucepan over medium heat. Add ¾ cup (177 ml) hot sauce, ½ cup (113 g) butter, 1½ tablespoons white vinegar, ¼ teaspoon Worcestershire sauce, ¼ teaspoon cayenne and ⅛ teaspoon garlic powder. Stir frequently until the sauce starts bubbling gently around the edges—about 5 minutes.
Make Coleslaw:
- Add 4 cups (280 g) shredded green cabbage and 1 small carrot to a large bowl.
- In a smaller bowl, combine ¼ cup mayonnaise, 1 tablespoon apple cider vinegar, 2 teaspoons Dijon mustard, 1 teaspoon Monk fruit sweetener, ¼ teaspoon celery seed and salt + black pepper.
- Add the dressing to the cabbage mixture and sir until fully coated. Cover and place in the fridge while you prepare everything else.
Heat the chicken:
- Add 2 cups (710 g) shredded rotisserie chicken to the buffalo sauce over medium-low heat. Stir to combine. Continue to heat until the chicken is hot.
- Add 4 ounces (113 g) cream cheese, 1 teaspoon garlic powder, ½ teaspoon smoked paprika and salt + pepper (to taste). Heat on low until the cheese is melted and everything is combined.
Make whipped hot honey gorgonzola:
- While the chicken is cooking, to a small bowl add 4 ounces gorgonzola, 4 ounces cream cheese, 2 tablespoons sour cream, 2 teaspoons honey and 1 pinch red pepper flakes. Whip it all together with a hand held mixer until smooth and fluffy.

- Heat a cast iron skillet over medium heat. Spread a light layer of butter on the inside of each side of the bun. Place buttered side down in the skillet and toast for 1-2 minutes. Remove to a plate.
